How to fill a restaurant on weekdays: ideas for the dead hours

Saturday is packed; Tuesday at 5 p.m. you have three tables. Practical ideas to fill off-peak hours without giving your margin away.

Rent, wages and electricity cost the same on Tuesday at 4 p.m. as on Saturday at 9. That’s why knowing how to fill a restaurant on slow weekdays is one of the most profitable things to work on: every extra table in a dead hour uses a kitchen and staff you’re already paying for.

First, measure your off-peak hours

For two weeks, write down how many tables are occupied in each time slot. The pattern is usually familiar: slow lunches Monday to Wednesday, a dip between 3 and 7 p.m., and quiet evenings until Thursday.

Example: occupied tables on a Tuesday at a bodegón in Almagro (out of 20)
12–3 p.m.14
3–7 p.m.3
7–9 p.m.6
9 p.m.–12 a.m.11

Illustrative numbers: do your own count, the dip varies by neighborhood.

Set lunch menu. Main, drink and dessert or coffee at a fixed price, with two or three rotating options. It has to be served in 10–15 minutes: someone with a one-hour lunch break won’t return after a 35-minute wait.

Merienda. Argentina’s afternoon snack is a gift for cafés. A Palermo coffee shop that already bakes medialunas can offer “café con leche + 2 medialunas” at a round price in the afternoon. Low cost, quick to serve.

Happy hour. At a craft beer bar, a half-price second pint from 6 to 8 p.m. brings in the after-work crowd. Add a sharing board: that’s where the margin is, not in the beer.

Events. A Tuesday trivia or a Wednesday wine tasting turns a slow night into a fixed date. More ideas in event ideas for restaurants and bars.

Do the math before launching a promotion

Happy hour with a half-price second pint: a pint sells for ARS 6,000 and costs ARS 1,500. Two pints bring in ARS 9,000 at a cost of 3,000, leaving 6,000. If that group wouldn’t have come otherwise, it’s new money. If they’d have come anyway, you lost 3,000. That’s why the deal belongs only in the slow slot. The details are in how to tell if a promotion is profitable.

Common mistakes

  • No time limit: the discount also eats into hours that filled up on their own.
  • Announcing it only on Instagram. Say it at the table, on the menu and in the window.
  • Switching ideas every week: a new time slot takes a month or two to catch on.
  • A printed menu that never changes: staff explain the happy hour table by table.
Which days are best for restaurant promotions?

Whichever your numbers show as slow; for many places it’s Monday to Wednesday and the 3–7 p.m. slot. Measure for two weeks before deciding.

Does happy hour work for restaurants, not just bars?

Yes, if it’s built on high-margin items (house cocktails, draft beer, sharing boards) and limited to a slot before dinner.
